I've been considering the reMarkable 2. I currently write with scrivener, edit on paper, and then copy the edits back into scrivener. Is the process the same with the remarkable other than not wasting a ton of paper? Not finding too much on the web.

The incontinence thing is conquerable. Get fleece belly bands (fun prints!) on Etsy. On Amazon, get "belly bands for male dogs" and some disposable liners. It'll give you both some sanity and comfort back.
I'm so sorry about Leia. By coincidence, I also lost my dog recently (Dec 30) and she was gone too soon. I'm glad that you were able to keep her collar. I found her toothbrush hadn't been cleared out and decided to keep that with me.

I look forward to the day I have time to write again. I cheered for you when Cricket was born. I've smiled to myself for your victories. And I understand those periods of dark times in Life that wear one down and stubbornly refuse to end.
